Ingredients
- 500 gramsground lamb
- 1 mediumonion
finely grated or minced
- 15 gramsfresh parsley
finely chopped
- 15 gramsfresh coriander (cilantro)
finely chopped
- 3 clovesgarlic cloves
minced
- 1 teaspoonground cumin
- 1 teaspoonground coriander
- 0 ½ teaspoonground cinnamon
- 1 teaspoonpaprika
- 0 ½ teaspoonred chili flakes
adjust to taste for heat
- 0 ½ teaspoonground black pepper
- 1 teaspoonsalt
- 1 tablespoonolive oil
- 8 pieceswooden or metal skewers
if wooden, soak in water for 30 minutes before use
Instructions
In a large mixing bowl, combine the ground lamb, grated onion, chopped parsley, chopped coriander, and minced garlic.
Add ground cumin, ground coriander, ground cinnamon, paprika, red chili flakes, ground black pepper, and salt to the meat mixture. Mix well using your hands until all ingredients are evenly incorporated, but do not overwork the meat.
Divide the mixture into 8 equal portions. With damp hands, mold each portion around a skewer, shaping it into a long oval or sausage shape, about 10-12 cm in length.
Preheat your grill or grill pan to medium-high heat. Brush the koftas lightly with olive oil to prevent sticking.
Grill the koftas for about 4-5 minutes on each side, turning carefully to ensure even cooking and a nice char on the outside. Internal temperature should reach at least 70°C (160°F) for safety.
Once cooked, remove from the grill and let rest for 3-5 minutes before serving.
