Ingredients
- 500 gramslamb leg or shoulder, cut into 1-inch cubes
- 3 tablespoonsolive oil
- 2 tablespoonslemon juice, fresh
- 3 piecesgarlic cloves, minced
- 1 teaspoonground cumin
- 1 teaspoonground coriander
- 1 teaspoonpaprika
- 1 teaspoondried oregano
- 0 ½ teaspoonground black pepper
- 1 teaspoonsalt
- 1 mediumred onion, cut into chunks
- 1 mediumbell pepper, cut into chunks
- 2 tablespoonsfresh parsley, chopped
for garnish
- 8 pieceswooden or metal skewers
Instructions
Prepare the marinade by combining olive oil, lemon juice, minced garlic, ground cumin, ground coriander, paprika, dried oregano, black pepper, and salt in a bowl. Mix well.
Place the lamb cubes in the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, preferably 2-3 hours for best flavor.
Soak wooden skewers in water for 30 minutes to prevent burning, if using wooden skewers.
Preheat grill or grill pan to medium-high heat.
Thread the marinated lamb cubes alternately with pieces of red onion and bell pepper onto the skewers.
Grill the kebabs for about 10-15 minutes, turning occasionally, until the lamb is cooked to your preferred doneness (internal temperature of about 145°F/63°C for medium-rare).
Remove from grill and let rest for 5 minutes.
Garnish with chopped fresh parsley before serving.
