Ingredients
- 500 gramsmutton mince (ground lamb or goat)
- 1 mediumonion
finely chopped
- 2 mediumgreen chili
finely chopped, adjust to taste
- 2 tablespoonsginger-garlic paste
- 3 tablespoonsfresh coriander leaves
finely chopped
- 1 tablespoonmint leaves
finely chopped
- 1 teaspoonred chili powder
- 1 teaspooncoriander powder
- 1 teaspoongaram masala powder
- 0 ½ teaspooncumin powder
- 0 ½ teaspoonchat masala
- 0 ½ teaspoonamchur powder (dry mango powder)
- 1 teaspoonsalt

- 0 ½ teaspoonblack pepper powder
- 1 tablespoonlemon juice
- 2 tablespoonsgram flour (besan)

Instructions
In a large mixing bowl, combine the mutton mince, finely chopped onion, green chilies, and ginger-garlic paste.
Add the fresh coriander, mint leaves, red chili powder, coriander powder, garam masala, cumin powder, chat masala, amchur powder, salt, and black pepper powder to the bowl.
Mix all ingredients thoroughly until the mixture is well combined and sticky. Add lemon juice and gram flour to help bind the mixture. Mix again.
Cover the bowl with cling film and refrigerate the mixture for at least 30 minutes to allow the flavors to meld and the mixture to firm up.
Preheat a grill pan or non-stick skillet over medium-high heat. Lightly oil the surface.
Divide the mixture into equal portions and shape each into a cigar or oval-shaped kebab about 3-4 inches long.
Place the kebabs on the grill pan and cook for about 6-7 minutes on each side, turning carefully, until fully cooked and nicely charred outside.
Remove from heat and let them rest for 2-3 minutes before serving.
