Ingredients

  • 500 gramsground beef

    preferably with some fat content for juiciness

  • 1 mediumonion

    finely chopped

  • 2 piecesgreen chili

    finely chopped, adjust for heat preference

  • 1 tablespoonginger paste
  • 1 tablespoongarlic paste
  • 3 tablespoonsfresh cilantro (coriander leaves)

    finely chopped

  • 2 tablespoonsfresh mint leaves

    finely chopped

  • 1 teaspoonred chili powder
  • 1 teaspoonground cumin
  • 1 teaspoonground coriander
  • 0 ½ teaspoongaram masala powder
  • 0 ½ teaspoonblack pepper
  • 1 teaspoonsalt

    adjust to taste

  • 2 tablespoonsbesan (gram flour)

  • 1 tablespoonlemon juice
  • 2 tablespoonsvegetable oil

    for grilling and brushing

  • 6 piecesskewers

    metal or soaked wooden skewers

Instructions

In a large mixing bowl, combine the ground beef, finely chopped onion, green chili, ginger paste, and garlic paste.

Add the chopped cilantro, mint leaves, red chili powder, ground cumin, ground coriander, garam masala, black pepper, salt, and besan to the meat mixture.

Mix everything thoroughly using your hands or a spoon until all ingredients are evenly combined and the mixture is slightly sticky. Add lemon juice and mix again.

Cover the bowl and refrigerate the mixture for at least 30 minutes to let the flavors meld.

Preheat your grill or barbecue to medium-high heat. If using an oven, preheat to 220°C (430°F) with grill mode on.

Divide the meat mixture into 6 equal portions. Take one portion at a time and mold it around a skewer, shaping it into a long sausage form, about 4-5 inches long and evenly thick.

Brush the kebabs lightly with vegetable oil to prevent sticking and help browning.

Place the skewers on the grill or in the oven. Cook for around 12-15 minutes, turning every 3-4 minutes to ensure even cooking and charring spots.

Check that the kebabs are cooked through and nicely browned on all sides.

Remove from heat and let them rest for 2-3 minutes before serving.
