Instructions
To prepare the puri dough, combine all-purpose flour, semolina, and salt in a bowl. Gradually add water and knead to form a stiff and smooth dough. Cover and let rest for 15 minutes.
Divide the dough into small lemon-sized balls. Roll each ball into a thin, small disc about 3-4 inches in diameter.
Heat oil in a deep frying pan or wok over medium-high heat until hot (about 180°C / 350°F). Fry the puris one at a time, pressing gently with a slotted spoon until they puff up and turn golden brown on both sides. Remove and drain on paper towels.
For the masala topping, mix boiled potatoes and cooked chickpeas in a large bowl. Add chopped onion, green chilies, tomato, and coriander leaves.
Season the mixture with chaat masala, roasted cumin powder, red chili powder, and salt. Toss gently to combine all flavors.
To assemble, place a fried puri on a serving plate. Spoon a generous amount of the potato-chickpea masala on top.
Drizzle tamarind chutney and green chutney over the masala for added tanginess and heat, if desired.
Garnish with additional fresh coriander leaves. Serve immediately to enjoy the puris crisp.
