Ingredients
- 500 gramspotatoes
peeled and diced into 1-inch cubes
- 150 gramsgreen peas
fresh or frozen
- 1 mediumonion
finely chopped
- 2 mediumtomato
pureed or finely chopped
- 1 tablespoonginger-garlic paste
- 1 smallgreen chili
finely chopped, optional for heat
- 2 tablespoonsvegetable oil
- 1 teaspooncumin seeds
- 0 ½ teaspoonturmeric powder
- 1 teaspooncoriander powder
- 0 ½ teaspoonred chili powder
- 0 ½ teaspoongaram masala
- 1 teaspoonsalt

- 250 milliliterswater
- 2 tablespoonsfresh cilantro (coriander leaves)

Instructions
Heat the vegetable oil in a medium pan over medium heat. Add the cumin seeds and let them sizzle for about 30 seconds until aromatic.
Add the finely chopped onions and sauté for 5-6 minutes until golden brown.
Stir in the ginger-garlic paste and green chili (if using). Cook for another 1-2 minutes until the raw smell disappears.
Add the pureed or finely chopped tomatoes. Cook for 5-7 minutes stirring occasionally until the oil starts to separate from the masala.
Add turmeric powder, coriander powder, red chili powder, and salt. Mix well and cook for 1-2 minutes.
Add the diced potatoes and green peas. Mix to coat the vegetables with the spices.
Pour in the water, stir well, and bring the mixture to a boil. Reduce the heat to low, cover the pan, and simmer for 20 minutes or until the potatoes are tender.
Once the potatoes are cooked, sprinkle the garam masala and gently mix. Cook uncovered for an additional 2 minutes.
Turn off the heat and garnish with freshly chopped cilantro.
