Instructions
Heat the vegetable oil in a large pan over medium heat. Add the finely chopped onion and sautΓ© until golden brown, about 7-8 minutes.
Add the minced garlic, grated ginger, and chopped green chili (if using). Cook for 1-2 minutes until fragrant.
Stir in the ground cumin, ground coriander, turmeric, red chili powder, and garam masala. Cook the spices for 1 minute to release their aroma.
Add the minced meat to the pan. Break up any clumps with a spoon and cook until the meat is browned and no longer pink, about 8-10 minutes.
Add the pureed or finely chopped tomatoes. Stir well, and cook for 5 minutes until the mixture thickens.
Add the diced potatoes, salt, and about 100 ml of water. Mix well, cover the pan, reduce the heat to low, and simmer for 20-25 minutes until the potatoes are cooked and tender, stirring occasionally.
Uncover and cook for another 5 minutes on medium heat to reduce excess moisture if necessary. Adjust seasoning to taste.
Garnish with freshly chopped cilantro before serving.
