Ingredients
- 500 gramsdried fava beans
soaked overnight in water
- 1 ½ literswater
- 4 tablespoonsolive oil
- 3 tablespoonsfresh lemon juice
- 3 clovesfresh garlic cloves
minced
- 2 teaspoonsground cumin
- 1 ½ teaspoonssalt
- 0 ½ teaspoonsblack pepper
- 2 tablespoonschopped fresh parsley
for garnish
- 1 mediumchopped fresh tomatoes
optional garnish

Instructions
Drain the soaked fava beans and rinse them well under cold water.
In a large pot, add the soaked fava beans and 1.5 liters of fresh water.
Bring to a boil over high heat, then reduce the heat to low, cover the pot, and let it simmer gently for about 60 to 90 minutes or until the beans are very tender, adding more water if necessary.
Once the beans are tender, drain most of the cooking water, leaving a small amount to keep the beans moist.
Add the olive oil, fresh lemon juice, minced garlic, ground cumin, salt, and black pepper to the beans.
Mash some of the beans slightly with the back of a spoon to create a creamy texture, but keep some whole for texture.
Simmer gently uncovered for another 10-15 minutes, stirring occasionally, to let the flavors blend.
Taste and adjust the seasoning with additional salt, lemon juice, or cumin as desired.
Serve warm or at room temperature, garnished with chopped parsley, and optionally chopped tomatoes and red onions on the side.
