Ingredients
- 600 gramsboneless chicken thighs or breasts
cut into 1.5-inch cubes
- 100 mlfresh cream
- 100 gramshung yogurt (thick yogurt)
- 1 tablespoongrated ginger
- 1 tablespoongrated garlic
- 1 teaspoongreen chili paste
adjust to taste
- 12 piecescashew nuts
soaked in warm water for 15 minutes and ground to a paste
- 2 tablespoonsmelted butter
- 50 gramsgrated cheese (optional)
processed cheese or mozzarella for extra creaminess
- 1 teaspoonblack pepper powder
- 0 ½ teaspoonwhite pepper powder
- 1 ½ teaspoonssalt
- 1 tablespoonlemon juice
- 2 tablespoonsoil
for basting
- 2 tablespoonscilantro leaves
finely chopped for garnish
Instructions
In a large mixing bowl, combine fresh cream, hung yogurt, grated ginger, grated garlic, green chili paste, and melted butter. Mix well until smooth.
Add the cashew paste and grated cheese (if using) to the cream mixture and stir thoroughly to combine.
Season the mixture with black pepper powder, white pepper powder, and salt. Add lemon juice and mix again.
Add the chicken pieces to the marinade and coat them well. Cover and refrigerate for at least 3 hours or overnight for best results.
Preheat your grill or oven to 200°C (about 400°F). Thread the marinated chicken onto skewers.
Place the skewers on a grill rack or baking tray lined with foil. Grill or bake for 12-15 minutes, turning halfway through, basting with oil to keep moist.
Check for doneness by ensuring the chicken is cooked through and tender. Remove from grill and rest for a few minutes.
Garnish with finely chopped cilantro leaves before serving.
