Instructions

1

In a mixing bowl, sift the gram flour to remove any lumps.

2

Gradually add water while stirring continuously to make a smooth, thick batter without lumps. The batter should be pourable but not too runny.

3

Add chopped onions, tomatoes, green chili, coriander leaves, carom seeds (if using), red chili powder, turmeric powder, and salt. Mix well to combine.

4

Heat a non-stick pan or skillet on medium heat. Lightly grease it with a few drops of oil.

5

Pour a ladleful of batter onto the pan and spread it gently in a circular motion to form a pancake about 6–7 inches in diameter.

6

Cook the chilla for 2–3 minutes or until the edges start to lift and the bottom turns golden brown.

7

Flip the chilla carefully and cook the other side for another 2 minutes or until golden and cooked through.

8

Brush a little oil around the edges if desired to crisp it up. Remove from the pan and set aside. Repeat with remaining batter.
