Instructions
In a mixing bowl, sift the gram flour to remove any lumps.
Gradually add water while stirring continuously to make a smooth, thick batter without lumps. The batter should be pourable but not too runny.
Add chopped onions, tomatoes, green chili, coriander leaves, carom seeds (if using), red chili powder, turmeric powder, and salt. Mix well to combine.
Heat a non-stick pan or skillet on medium heat. Lightly grease it with a few drops of oil.
Pour a ladleful of batter onto the pan and spread it gently in a circular motion to form a pancake about 6β7 inches in diameter.
Cook the chilla for 2β3 minutes or until the edges start to lift and the bottom turns golden brown.
Flip the chilla carefully and cook the other side for another 2 minutes or until golden and cooked through.
Brush a little oil around the edges if desired to crisp it up. Remove from the pan and set aside. Repeat with remaining batter.
