Ingredients
- 400 gramsPaneer (Indian cottage cheese)
cut into 1-inch cubes
- 150 gramsThick yogurt (curd)
hung yogurt preferred
- 2 tablespoonsLemon juice
- 1 tablespoonGinger-garlic paste
- 1 teaspoonRed chili powder
- 2 teaspoonsTandoori masala powder
- 0 ½ teaspoonTurmeric powder
- 1 teaspoonGaram masala powder
- 1 teaspoonChaat masala
- 1 teaspoonKasuri methi (dried fenugreek leaves)

- 1 ½ tablespoonsMustard oil
- 1 teaspoonSalt

Instructions
Prepare the hung yogurt by draining excess water from regular yogurt using a muslin cloth for about 2 hours (optional but recommended for thicker marinade).
In a mixing bowl, combine yogurt, lemon juice, ginger-garlic paste, red chili powder, tandoori masala powder, turmeric powder, garam masala powder, chaat masala, crushed kasuri methi, mustard oil, and salt. Mix well to form a smooth marinade.
Add the paneer cubes, bell pepper pieces, and onion pieces into the marinade. Gently coat them well and let marinate for at least 30 minutes, preferably 1-2 hours in the refrigerator.
Preheat the grill or oven to 220°C (428°F). If using an oven, line a baking tray with aluminum foil and lightly oil it.
Thread the marinated paneer, bell peppers, and onion pieces alternately onto the skewers.
Place the skewers on the grill rack or baking tray. Grill or bake for about 12-15 minutes, turning once halfway to ensure even cooking and slight charring.
Once cooked, remove from heat and sprinkle with a little chaat masala and lemon juice if desired.
