Ingredients
- 1 medium headcauliflower
cut into bite-sized florets
- 150 gramsplain yogurt
preferably full-fat
- 1 tablespoonlemon juice
- 2 tablespoonstandoori masala
- 1 teaspoongarlic paste
- 1 teaspoonginger paste
- 0 Β½ teaspoonground cumin
- 1 teaspoonsmoked paprika
- 0 ΒΌ teaspooncayenne pepper
adjust to taste
- 1 teaspoonsalt
- 2 tablespoonsvegetable oil
plus extra for drizzling
- 2 tablespoonsfresh cilantro
chopped, for garnish
- 4 pieceslemon wedges

Instructions
Preheat the oven to 220Β°C (430Β°F). Line a baking sheet with parchment paper.
In a large bowl, whisk together the plain yogurt, lemon juice, tandoori masala, garlic paste, ginger paste, ground cumin, smoked paprika, cayenne pepper, salt, and 2 tablespoons of vegetable oil until smooth.
Add the cauliflower florets to the marinade and toss well to coat evenly. Let it marinate for 15 minutes for enhanced flavor.
Arrange the marinated cauliflower florets in a single layer on the prepared baking sheet. Drizzle a little vegetable oil over the top to help crisp up.
Bake in the preheated oven for 20-25 minutes, turning halfway through, until the cauliflower is tender inside and slightly charred around the edges.
Remove from the oven and let cool slightly. Garnish with chopped fresh cilantro and serve with lemon wedges on the side.
