- 100 gramswhite rice (short grain)
rinsed
- 1 literwhole milk
- 100 gramsgranulated sugar
- 5 podsgreen cardamom pods
lightly crushed
- 15 gramsunsalted butter
- 1 teaspoonvanilla extract
- 0 ½ teaspoonground cinnamon

- 15 gramschopped pistachios or almonds
optional, for garnish
Instructions
Rinse the rice under cold running water until the water runs clear to remove excess starch.
In a heavy-bottomed saucepan, combine the rinsed rice and whole milk. Add the crushed cardamom pods.
Bring the mixture to a gentle boil over medium heat, then reduce the heat to low and simmer gently, stirring frequently to prevent the rice from sticking to the bottom.
After about 25 minutes, when the rice is tender and the mixture has thickened, add the sugar and unsalted butter. Stir well until fully incorporated.
Continue to cook the pudding on low heat for another 10-15 minutes, stirring occasionally, until it reaches a creamy but not runny consistency.
Remove the saucepan from heat. Stir in the vanilla extract and discard the cardamom pods.
Serve the rice pudding warm or chilled, garnished with a light sprinkle of ground cinnamon and chopped pistachios or almonds if desired.
