Ingredients
- 100 gramsvermicelli
preferably thin vermicelli
- 1 literfull-fat milk
- 150 gramsdates
pitted and chopped
- 100 gramssugar
adjust to taste
- 2 tablespoonsghee
- 4 wholecardamom pods
crushed
- 10 strandssaffron strands
soaked in 2 tablespoons warm milk
- 15 gramsalmonds
sliced
- 15 gramspistachios
sliced
- 15 gramscashew nuts
broken into halves
- 1 teaspoonrose water
optional
Instructions
Heat ghee in a heavy-bottomed pan over medium heat. Add vermicelli and sauté until light golden brown, stirring constantly to prevent burning, about 3-4 minutes.
Add chopped dates to the vermicelli and continue to sauté for another 2 minutes to soften the dates slightly.
Pour in the milk and stir well. Add crushed cardamom pods and bring the mixture to a gentle boil over medium heat.
Reduce heat to low and simmer, stirring occasionally, until the vermicelli is fully cooked and the milk has thickened slightly, about 15-20 minutes.
Add sugar and stir to dissolve completely. Adjust sweetness to taste.
Add the saffron-infused milk strands and mix well to incorporate the color and aroma.
Stir in the sliced almonds, pistachios, and cashew nuts. Cook for another 2-3 minutes to allow the flavors to meld.
Turn off the heat. Optionally, add rose water and stir gently.
Serve warm or chilled, garnished with extra nuts or a few saffron strands if desired.
