
Rogan Josh - Authentic Pakistani Style
A rich and aromatic lamb curry cooked with a blend of traditional spices, yogurt, and browned onions. Rogan Josh is a classic dish in Pakistani cuisine known for its vibrant red color and deep flavor.
Ingredients
- 1 ½ kgLamb shoulder, cut into chunks
- 1 cupPlain yogurt
- 3 mediumOnions, finely sliced
- 2 tbspGarlic paste
- 2 tbspGinger paste
- 1 cupTomato puree
- 4 tbspMustard oil
- 2 tspRed chili powder

- 2 tspCoriander powder
- 1 tspTurmeric powder
- 1 tspGaram masala powder
- 1 tspKashmiri red chili powder
for color
- 4 piecesWhole green cardamoms
- 1 inchCinnamon stick
- 4 piecesCloves
- 2 piecesBay leaves
- 2 tspSalt

- 2 cupsWater
- 0 ¼ cupFresh coriander leaves
chopped for garnish
Instructions
Heat mustard oil in a heavy-bottomed pot until it starts to smoke slightly. Reduce the heat.
Add whole green cardamoms, cinnamon stick, cloves, and bay leaves. Sauté for a minute until fragrant.
Add finely sliced onions and cook on medium heat until they turn golden brown, stirring occasionally.
Add garlic and ginger paste. Cook for 2-3 minutes until the raw smell disappears.
Add lamb pieces and sear on high heat until they turn brown on all sides.
Mix in red chili powder, Kashmiri chili powder, coriander powder, turmeric powder, and salt. Stir well to coat the lamb with spices.
Add tomato puree and cook for 5-7 minutes until the oil separates from the masala.
Add yogurt gradually while stirring continuously to avoid curdling.
Pour in 2 cups of water to cover the meat partially. Bring to a boil, then reduce the heat to low, cover, and simmer for about 1 to 1.5 hours until lamb is tender.
Once the meat is tender and sauce thickened, sprinkle garam masala powder. Stir and cook for 5 more minutes.
Garnish with fresh coriander leaves before serving.
