Ingredients
- 250 gramspaneer
cubed
- 50 gramsunsalted butter
- 1 mediumonion
finely chopped
- 200 gramstomato puree
- 100 mlfresh cream
- 15 gramscashew nuts
soaked and ground to a paste
- 1 tablespoonginger garlic paste
- 1 smallgreen chili
slit, optional
- 1 teaspoonkasuri methi (dried fenugreek leaves)
crushed
- 1 teaspoonred chili powder
- 0 ½ teaspoonturmeric powder
- 1 teaspoongaram masala
- 1 ½ teaspoonscoriander powder
- 1 teaspoonsalt
adjust to taste
- 0 ½ teaspoonsugar
- 150 mlwater
- 2 tablespoonsfresh coriander leaves
chopped for garnish
Instructions
Heat 25 grams of butter in a pan over medium heat. Add finely chopped onions and sauté until golden brown, about 8-10 minutes.
Add ginger garlic paste and slit green chili, sauté for 1-2 minutes until raw smell disappears.
Add tomato puree, red chili powder, turmeric powder, coriander powder, and salt. Cook on medium heat until oil starts to separate from the masala, about 10-12 minutes.
Add the cashew nut paste and mix well. Cook for another 3-4 minutes to combine.
Add water to adjust the consistency of the gravy. Bring to a gentle simmer.
Add paneer cubes gently to the gravy. simmer for 5-6 minutes on low heat to allow paneer to absorb flavors.
Add the remaining butter, fresh cream, kasuri methi (crushed), garam masala, and sugar. Stir gently and cook for another 2 minutes without boiling.
Turn off the heat. Garnish with freshly chopped coriander leaves and serve hot.
