Ingredients

  • 1 cupfresh mint leaves

    washed and tightly packed

  • 1 cupfresh coriander (cilantro) leaves

    washed and tightly packed

  • 1 green chili

    adjust according to heat preference

  • 2 tablespoonsfresh lemon juice
  • 1 teaspoonginger

    freshly grated

  • 1 teaspooncumin seeds

    dry roasted

  • 0 ½ teaspoonsalt
  • 0 ½ teaspoonsugar
  • 2 tablespoonswater

    adjust as needed for consistency

Instructions

Dry roast the cumin seeds in a small pan over medium heat for 1-2 minutes until fragrant. Allow to cool.

In a blender or food processor, combine the fresh mint leaves, coriander leaves, green chili, freshly grated ginger, cooled cumin seeds, lemon juice, salt, and sugar (if using).

Add about 2 tablespoons of water to help blend the ingredients smoothly. Blend until you achieve a smooth, vibrant green chutney. Adjust water quantity for desired consistency.

Taste and adjust seasoning with more salt or lemon juice if needed.
