Ingredients
- 250 mlwater
- 250 mlwhole milk
- 2 tablespoonsblack tea leaves (Assam or Darjeeling)
- 1 inchfresh ginger
peeled and thinly sliced
- 4 podsgreen cardamom pods
crushed slightly
- 3 wholecloves
- 1 2-inch piececinnamon stick
- 4 wholeblack peppercorns
- 2 tablespoonssugar

Instructions
In a saucepan, combine the water, fresh ginger slices, cardamom pods, cloves, cinnamon stick, and black peppercorns.
Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat and let it simmer for 5 minutes to allow the spices to infuse.
Add the black tea leaves to the spiced water and simmer for another 2-3 minutes, depending on the desired tea strength.
Pour in the milk and sugar, stir well, and bring the chai back to a gentle boil. Watch carefully to prevent it from boiling over.
Once it starts to rise, reduce the heat and simmer for an additional 2 minutes to blend the flavors.
Strain the tea through a fine mesh sieve into cups to remove the tea leaves and spices.
