Ingredients
- 500 gramsplain yogurt
preferably chilled, full-fat or low-fat
- 3 cupscold water
- 1 tablespoonroasted cumin seeds
freshly roasted for best flavor
- 1 teaspoonfresh ginger
grated
- 1 smallgreen chili
finely chopped, optional
- 2 tablespoonsfresh coriander leaves
finely chopped
- 1 teaspoonblack salt (kala namak)
adjust to taste
- 0 ½ teaspoonregular salt
adjust to taste
- 1 tablespoonfresh mint leaves
finely chopped, optional
Instructions
In a large mixing bowl, whisk the plain yogurt until smooth and creamy to remove any lumps.
Gradually add cold water to the yogurt while continuing to whisk to create a smooth and slightly frothy buttermilk base.
Using a mortar and pestle or spice grinder, coarsely grind the roasted cumin seeds. Add this to the buttermilk mixture.
Add the grated fresh ginger, finely chopped green chili (if using), chopped coriander leaves, and mint leaves to the buttermilk.
Season with black salt and regular salt. Stir well to combine all ingredients.
Taste and adjust seasoning if needed. Chill the Masala Chaas in the refrigerator for at least 30 minutes before serving for best flavor.
Serve the Masala Chaas cold, garnished with a few coriander or mint leaves for a fresh look.
