Ingredients
- 500 gramsfull-fat yogurt (curd)
use fresh, thick yogurt
- 250 gramsripe mango puree
preferably Alphonso or Kesar mangoes, smooth puree
- 80 gramspowdered sugar
adjust sweetness as per taste
- 3 piecesgreen cardamom pods
seeds crushed to powder
- 8 strandssaffron strands
soaked in 1 tbsp warm milk
- 1 tablespoonmilk
warm, to soak saffron
- 2 tablespoonschopped pistachios
for garnish
- 1 tablespoonslivered almonds
for garnish (optional)
Instructions
Line a fine strainer or muslin cloth over a bowl and pour the yogurt into it. Let it drain in the refrigerator for 4-6 hours or overnight to remove excess whey and thicken the yogurt.
Once the yogurt is thick and creamy, transfer it to a mixing bowl. Add powdered sugar and crushed cardamom seeds.
Add the mango puree to the thickened yogurt and mix gently until smooth and homogenous.
Soak the saffron strands in 1 tablespoon of warm milk for about 10 minutes, then add this saffron milk to the mango-shrikhand mixture. Mix well.
Taste and adjust the sweetness if needed. Chill the shrikhand in the refrigerator for at least 1 hour before serving.
Garnish with chopped pistachios and slivered almonds before serving.
