Ingredients

  • 500 gramsbeef, boneless and cut into small cubes
  • 3 tablespoonscoconut oil
  • 2 mediumonion, thinly sliced
  • 3 piecesgreen chilies, slit
  • 1 tablespoonginger garlic paste
  • 2 sprigscurry leaves
  • 2 teaspoonsred chili powder
  • 0 ½ teaspoonturmeric powder
  • 1 tablespooncoriander powder
  • 1 teaspoongaram masala
  • 1 teaspoonblack pepper powder
  • 1 ½ teaspoonssalt
  • 200 milliliterswater
  • 2 tablespoonsplain yogurt (optional)

Rinse the beef cubes under cold water and drain. Marinate with ginger garlic paste, turmeric powder, red chili powder, coriander powder, and salt. If using yogurt, add it now. Mix well and let it sit for at least 30 minutes for better flavor.

Heat coconut oil in a heavy-bottomed pan on medium heat. Add sliced onions and sauté until golden brown, about 10-12 minutes. This slow caramelization adds depth to the dish.

Add slit green chilies and curry leaves to the pan. Sauté for another 2 minutes until fragrant.

Add the marinated beef to the pan. Stir well to combine with onions and spices. Cook on medium-high heat for 5 minutes to sear the meat.

Add water to the pan, cover, and reduce heat to low. Let the beef cook until tender, about 40-45 minutes, stirring occasionally and adding small amounts of water if needed to prevent sticking.

Once the beef is tender and the water has mostly evaporated, uncover and increase heat to medium. Add garam masala and black pepper powder. Fry the beef while stirring continuously until it becomes dry and well-coated with the spices and oil, about 10-15 minutes.

Check seasoning and adjust salt if needed. Remove from heat and let the dish rest for 5 minutes before serving.
